How to Make Healthy Lunch


Quinoa & Chickpea Salad
Ingredients:

1 cup cooked quinoa
½ cup canned chickpeas (drained & rinsed)
½ cucumber, diced
½ bell pepper, diced
¼ red onion, chopped
¼ cup feta cheese (optional)
1 tbsp olive oil
1 tbsp lemon juice
Salt & pepper to taste
Fresh parsley for garnish
Instructions:

In a large bowl, mix quinoa, chickpeas, cucumber, bell pepper, red onion, and feta cheese.
Drizzle with olive oil and lemon juice.
Season with salt and pepper.
Garnish with fresh parsley and serve chilled.
