Garlic Butter Chicken Fried Rice
Ingredients:
– 2 boneless, skinless chicken breasts, cut into strips
– 1 tablespoon olive oil
– 1 tablespoon butter
– 3 cloves garlic, minced
– 1 teaspoon ginger, minced
– 1 teaspoon salt
– ½ teaspoon black pepper
– ½ teaspoon paprika
– 2 cups cooked basmati rice (day-old rice works best)
– 1 cup frozen peas and carrots, thawed
– 2 green onions, chopped
– 1 tablespoon oyster sauce (optional)
– 1 teaspoon sesame oil
– Fresh cilantro or parsley for garnish
Directions:
1. In a bowl, marinate the chicken with soy sauce, salt, black pepper, and paprika. Let it sit for about 10 minutes.
2. Heat olive oil in a large pan over medium-high heat. Add the marinated chicken and cook for 5-7 minutes until golden brown and fully cooked. Remove from the pan and set aside.
3. In the same pan, melt butter and sauté the garlic and ginger until fragrant, about 30 seconds.
4. Add the cooked rice to the pan and stir well to combine with the garlic butter.
5. Toss in the peas and carrots, stirring for another 2 minutes until they are heated through.
6. Pour in the oyster sauce and sesame oil, mixing everything evenly.
7. Add the cooked chicken back to the pan, stir everything together, and cook for another 2 minutes.
8. Garnish with chopped green onions and fresh cilantro or parsley. Serve warm and enjoy!
