Lemon Herb Garlic Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon
  • 1 lemon, sliced
  • ¼ cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix the paprika, oregano, thyme, salt, and black pepper.
  3. Pat the chicken breasts dry with a paper towel and rub them with the spice mixture.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
  5. In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
  6. Add the chicken broth and lemon juice, stirring to deglaze the pan. Let it simmer for 1 minute.
  7. Return the chicken to the skillet, spoon some of the sauce over the top, and arrange lemon slices around it.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  9. Remove from the oven, garnish with freshly chopped parsley, and serve warm.
