Ingredients:
- 4 boneless, skinless chicken breasts
- 3 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- Juice of 1 lemon
- 1 lemon, sliced
- ¼ cup chicken broth
- 2 tablespoons fresh parsley, chopped
Directions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix the paprika, oregano, thyme, salt, and black pepper.
- Pat the chicken breasts dry with a paper towel and rub them with the spice mixture.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken and sear for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter and sauté the minced garlic for about 30 seconds until fragrant.
- Add the chicken broth and lemon juice, stirring to deglaze the pan. Let it simmer for 1 minute.
- Return the chicken to the skillet, spoon some of the sauce over the top, and arrange lemon slices around it.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven, garnish with freshly chopped parsley, and serve warm.
